Nice recipes, Sarah. It is strange how tastes change as we get older. I don’t like to eat Aubergine, as I find it too slimy. I also don’t like the bitter taste of courgettes any more, though I once enjoyed them.
My Mum always cooked vegetables until they were almost a mush, so it took a long time for me to get used to crisper, Al-dente preparation. I eat almost any of them now, where once I was stuck at the dinner table until I finished my ‘greens’!

Familiar. I once stayed at a B&B where they put the vegetables on for the evening meal at some ludicrous hour of the afternoon. By the time they reached the table, they were beyond ‘mush’! x
